Things I will make in the next month – part 2 & 3

My grandmother used to take me to Neiman Marcus for lunch quite often, and my favorite part of the meal was the dang popovers and the little bitty cup of chicken broth. I’m easy to please, what can I say? Neiman’s also puts out the best cookbooks ever – I love them all!

Neiman Marcus Popovers 

3 eggs

1 cup milk

3 Tbsp. oil

1 cup flour

1/2 tsp. salt

Preheat oven to 400°. Beat eggs, milk, and oil together. Sift flour and salt over egg mixture and beat until smooth. Fill 6 popover cups 3/4 full. Bake 30 minutes; reduce heat to 325° and bake 15 minutes more. Serve with strawberry butter.

Strawberry Butter

1 lb. butter

1 jar strawberry preserves

Mix together. Makes a TON. I usually halve the recipe!

I always make a little vent in the popovers after they are finished cooking, especially if I’m not serving them right away – they will fall and look ugly if you don’t 😦
You don’t *need* a popover pan (I have one and I love it). You can use a muffin tin if you have to.
