Banana Pudding Amaretto
2 egg yolks
1 cup whole milk
1 cup heavy cream or half-and-half
1 1/2 Tbsp. flour
1 cup sugar
1/4 – 1/3 cup Amaretto
2 Tbsp. butter
1 cup non-dairy whipped topping
Line bottom of 8 or 9 inch square pan with vanilla wafers. Top with sliced bananas.
Combine sugar and flour in saucepan. Beat egg yolks with milk and add to sugar mixture. Add heavy cream. Cook over low heat until thick.
Add butter and continue to cook for 2 minutes. Add Amaretto and cook an additional 1 minute.
Remove from heat and fold in whipped topping. Pour over wafers and bananas. Top with wafer crumbs, if desired. Cool to set in refrigerator, preferably overnight.
