Chicken Spaghetti part 2

This one is a little more involved. I usually put some mozzarella cheese on top too 🙂

Chicken Spaghetti

Vegetable cooking spray

1/4 cup plus 2 Tbsp. diced onion

1/2 cup diced celery

1/4 cup diced green pepper

1 clove garlic, minced

1 (16 oz) can tomatoes, undrained and chopped

1/4 tsp. paprika

1/4 tsp. chili powder

1/4 tsp. ground cumin

1/4 tsp. black pepper

1/8 tsp. red pepper

8 oz. skinned, boned, uncooked chicken breast, cut into bite-size pieces

1 cup hot cooked vermicelli

Parsley sprigs (optional)

Coat a large skillet with cooking spray; place over medium-high heat until hot. Add onion, celery, green pepper, and garlic; saute until tender. Stir in tomatoes and next 5 ingredients. Cover, reduce heat, and simmer 15 minutes. Add chicken; cover and simmer 15 minutes. Serve over vermicelli, and garnish with parsley if desired.

Serves 2.
