Oh man, this is my childhood. This recipe is from my mom’s best friend while I was growing up.
1 1/4 cup cooked spaghetti
1 1/2 – 2 cups cooked, diced chicken
1/4 cup pimentos
1/4 cup green peppers, chopped
1/2 cup chopped onion
1 can cream of mushroom soup
1/2 cup water
1/2 tsp. salt
1/8 tsp. pepper
1 3/4 cups grated cheddar cheese
Add chicken, pimentos, green peppers, and onion to the cooked spaghetti. Pour in soup and water, salt and pepper. Add cheese (save some for top). Refrigerate for 1 hour. Bake 45 minutes at 350°.
