Lemon Chicken

Lemon Chicken

4 boneless, skinless chicken breasts, cut into strips

1 cup flour

1 tsp. salt

1 tsp. pepper

1/4 cup clarified butter

3/4 cup chicken stock

2 Tbsp. lemon juice

1 Tbsp. parsley, chopped

Flatten chicken between two pieces of waxed paper. Dredge in flour seasoned with salt and pepper. Pour clarified butter into frying pan and lightly brown chicken. Add chicken stock, lemon juice and parsley. Bring to a boil and cook for 8 minutes.

Serves 4.
