Mom's Spicy Chicken Pasta

Another one from Pigtails and Frog Legs. It’s a kid’s cookbook, but it’s a great one for grown-ups too. Some of my favorite cookbooks are meant for kids 🙂 I wonder what that says about me…

Mom’s Spicy Chicken Pasta

1 lb. boneless, skinless chicken breasts, cubed

1 small red onion, chopped

2 Tbsp. olive oil

1 large tomato, chopped

1 can (7 oz) chopped green chilies

1 pkg. (16 oz) pasta, cooked

1 pint whipping cream

1 large avocado, chopped

In a medium-sized skillet combine chicken, red onion and olive oil. Cook approximately 5 minutes or until tender. Season to taste. Add tomato and green chilies. Cook for 3 minutes or until chicken is done. Add chicken mixture to pasta. Slowly stir in whipping cream and avocado. Serve immediately.

Serves 4.

* 2 tsp. of garlic will make an excellent addition.

* You can prepare pasta without chicken and serve as a side dish.
