Cajun Chicken

I recently discovered that I love the flavor of paprika, so I’m trying to make a lot of things with it 🙂

Cajun Chicken

4 boneless, skinless chicken breast halves (4 oz each)

Butter-flavored vegetable cooking spray

Cajun Seasoning (recipe follows)

1. Spray both sides of chicken pieces with cooking spray; sprinkle with Cajun Seasoning. Grill chicken over medium-hot coals, or broil 6 inches from heat source, until chicken is cooked and juices run clear, about 5-8 minutes on each side.

Cajun Seasoning

Makes about 2 Tbsp.

2 tsp. paprika

1 tsp. each: onion powder, garlic powder

1/2 tsp. each: dried thyme and oregano leaves, cayenne and black pepper

1/4 tsp. salt

1. Mix all ingredients; store in airtight container.

Serves 4.
