Chicken with Gingered Honey-Orange Sauce

8 skinless chicken breast halves (6 oz each)

Vegetable cooking spray

Paprika, salt, and pepper

Gingered Honey-Orange Sauce (recipe follows)

1. Place chicken in greased baking pan; spray lightly with cooking spay and sprinkle with paprika, salt, and pepper. Bake, uncovered, at 350° until chicken is browned and juices run clear, 30-40 minutes, basting occasionally with Gingered Honey-Orange Sauce. Serve with remaining sauce.

Gingered Honey-Orange Sauce

Makes 1 1/4 cups

1 cup orange juice

2 Tbsp. honey

Grated zest of one orange

1-2 Tbsp. finely chopped gingerroot

1 Tbsp. flour

1 orange, peeled, cut into segments

1. Combine all ingredients, except orange segments, in small saucepan; heat to boiling. Boil, whisking until thickened, about 1 minute; stir in orange segments and cook over low heat 2-3 minutes.

Serves 8.
