Chayote with Pepitas

Pepitas are Mexican pumpkin seeds. I saw some this weekend at the Vending Nut Co. in Fort Worth – I’m sure they have them at Central Market and Whole Foods.

Chayote with Pepitas

1/2 cup finely chopped onion

2 cloves garlic, minced

1 chayote squash, peeled, pitted, cubed

4 tsp. pepitas, toasted

Salt and pepper, to taste

1. Saute onion and garlic in lightly greased large skillet until tender, 3-5 minutes. Add squash and cook over medium heat until squash is crisp-tender, about 20 minutes, stirring occasionally. Stir in pepitas; season to taste with salt and pepper.

Serves 4.
