Chicken Oscar

2 cups seasoned stuffing mix

1/2 cup reduced-sodium fat-free chicken broth

6 boneless, skinless chicken breast halves (4 oz each)

24 asparagus spears, cooked crisp-tender, warm

6 slices (1/2 oz each) provolone cheese

1. Combine stuffing mix and broth; spoon stuffing into 6 mounds in greased 13×9 baking pan. Top with chicken breasts. Bake, covered, at 350° until chicken is cooked, about 30 minutes. Uncover and top with asparagus and cheese slices; bake, uncovered until cheese is melted, about 5 minutes.

Serves 6.
