Chicken Paprikash

I can’t help but think of Billy Crystal when I hear the word “paprikash”. 🙂

Chicken Paprikash

1 lb. boneless, skinless chicken breast, cubed (3/4 inch)

1 Tbsp. margarine or butter

1 cup chopped onion

4 cloves garlic, minced

2 Tbsp. flour

1/2 cup reduced-sodium chicken broth

1/4 cup dry white wine or chicken broth

1 cup chopped tomato

1 tsp. paprika

1/2 cup fat-free sour cream

Salt and white pepper, to taste

3 cups cooked noodles, warm

1. Saute chicken in margarine in large saucepan until browned, 8-10 minutes; add onion and garlic and saute 5 minutes. Stir in flour and cook 1 minute. Add chicken broth, wine, tomato, and paprika and heat to boiling; reduce heat and simmer, covered, until chicken is tender, 15-20 minutes. Stir in sour cream and cook, uncovered, 2-3 minutes. Season to taste with salt and white pepper; serve over noodles.
