Jicama Salad

Jicama Salad

12 oz. jicama, peeled, cut into strips (1 1/2 in x 1/2 inch)

1/2 cup sliced zucchini

1 small orange, peeled, cut into segments

2-3 thin slices red onion

Cilantro Lime Dressing (recipe follows)

Salt and pepper, to taste

1. Combine all ingredients, except salt and pepper, in salad bowl and toss. Season to taste with salt and pepper.

Cilantro Lime Dressing

Makes about 1/4 cup

2 Tbsp. each: lime juice, chopped cilantro

1 Tbsp. orange juice

1-2 Tbsp. olive or canola oil

2 tsp. sugar

1. Combine all ingredients.

Serves 6.

Per serving: Cal 77, % from fat 27, fat 2.4, sat fat 0.3, chol 0, sodium 1, protein 1.3, carbs 13.5
