Smoky Three Bean Soup

8 oz. turkey smoked sausage, cut into scant 1/2-inch slices

1 cup chopped onion

1 cup sliced celery

2 tsp. minced garlic

1 Tbsp. vegetable oil

1 1/2 quarts chicken broth

2 cups cubed, peeled sweet potatoes

2 cups cubed, peeled Idaho potatoes

1 can (15 oz) navy beans, rinsed, drained

1 can (15 oz) pinto beans, rinsed, drained

1 can (15 oz) black beans, rinsed, drained

3/4 tsp. dried thyme leaves

1 bay leaf

1 1/2-2 tsp. salt

1/2 tsp. pepper

1. Saute smoked sausage, onion, celery, and garlic in oil in Dutch oven until sausage is browned, 5-8 minutes. Add remaining ingredients and heat to boiling; reduce heat and simmer, covered, until potatoes are tender, 10-15 minutes.

Serves 8 (about 1 1/2 cups each)
