Tomato-Herb Bruschetta

12 slices French bread

2 large cloves garlic

2 Tbsp. olive oil

1 1/2 cups fresh plum tomatoes, peeled, seeded, chopped

1/2 cup chopped fresh basil leaves

1 Tbsp. chopped fresh (or 1 tsp. dried) oregano leaves

Salt and pepper, to taste

1. Grill or toast bread slices. Rub each slice with garlic, and brush with olive oil.

2. Mix tomatoes and herbs in bowl; season to taste with salt and pepper. Top bread slices with tomato mixture and serve immediately.

Serves 6.
