Beany Macaroni Salad

1 1/2 cups cooked macaroni, cold

1 lb. cooked chicken breast, cut into scant 1/2-inch cubes

2 cans (15 oz each) light red kidney beans, rinsed, drained

1/2 cup sliced celery

1/2 cup sliced carrots

Honey dressing (recipe follows)

Salt and pepper, to taste

1. Combine all ingredients, except salt and pepper, in large bowl, mixing well. Season to taste with salt and pepper.

Honey Dressing

Makes about 3/4 cup

1.3 cup fat-free mayonnaise

2-3 Tbsp. honey

2 tsp. prepared yellow mustard

1. Whisk all ingredients in medium bowl.

8 servings (about 1 cup each)
