Hamburger Soup

1 lb. lean ground beef

1 small onion, chopped

1 can (16 oz) diced tomatoes, undrained

2 cups sliced carrots

2 cups broccoli florets

3 cups reduced-sodium beef broth

1 can (15 oz) black beans, rinsed, drained

1 can (15 oz) Great Northern beans, rinsed, drained

1/2 tsp. dried thyme leaves

Salt and pepper, to taste

1. Cook beef and onions in large saucepan until beef is browned, about 10 minutes. Stir in remaining ingredients and heat to boiling. Reduce heat and simmer, covered, until vegetables are tender, about 10 minutes. Season to taste with salt and pepper.

Serves 8 (about 1 cup each)
