My sister works/teaches with a lady who, apparently, is a very good cook. My sister hates all things coconut, so she has never tasted this but has heard nothing but good things about it. I finally remembered to get the recipe from her, and I tend to lose recipes if I don’t put it on the computer – so here it is!
1 Butter recipe cake mix
1 can Eagle Brand milk (sweetened condensed milk)
1 can Coco Lopez cream of coconut (with the drink mixers)
1 tub Cool Whip
1 bag shredded, sweetened coconut
Bake the cake as directed. Poke holes in the top, and pour the sweetened condensed milk over the top. Next, pour cream of coconut on top. Refrigerate long enough to chill.
Spread Cool Whip on top, then sprinkle with coconut.
