White Chicken Chili

This is another one from my sister’s co-worker – she HAS tried this one, and she made it for her family last week. She loved it (and so did my brother-in-law)!

White Chicken Chili

1 bag Pictsweet Seasoning blend (I guess you could chop up onions, peppers, etc. if you wanted to, but I’m lazy, so frozen it is!)

1 rotisserie chicken, shredded

1 lb. smoked sausage, diced (I believe she normally uses andouille, but smoked sausage works as well)

1 can Hatch green enchilada sauce

1 can chopped green chiles

1 can Rotel

1 can corn (I would probably use 2, but I like corn)

2 cans cannellini beans

1 1/2 qt. chicken broth

Saute seasoning blend in olive oil. Add all ingredients to stock pot and bring to a boil. Lower heat and simmer for 1 hour.
